This dinner makes great leftovers! We have been enjoying it as heated up leftovers the past few days. It’s also a kid friendly meal.

For this recipe we use ground beef as the main protein, you could use ground turkey or chicken as a leaner meat option.

Yes you can! substitute the store bought spaghetti sauce with 2 1/2 cups of homemade sauce. Here is an easy recipe you can follow to make your own homemade spaghetti sauce:

Ingredients:

  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (28 ounces) crushed tomatoes
  • 1 can (6 ounces) tomato paste
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon sugar (optional, to balance acidity)
  • Salt and pepper to taste

Instructions:

  1. Heat olive oil in a large saucepan over medium heat.
  2. Add the chopped onion to the pan and cook until softened, about 5 minutes.
  3. Add the minced garlic to the pan and cook for another 1-2 minutes until fragrant, being careful not to let it burn.
  4. Stir in the crushed tomatoes and tomato paste, mixing well to combine.
  5. Add the dried basil, dried oregano, and dried thyme to the sauce, stirring to incorporate the herbs evenly.
  6. If desired, add a pinch of sugar to balance the acidity of the tomatoes. Season with salt and pepper to taste.

Ingredients

  • 1 lb ground beef
  • 1 medium onion
  • 2 tsp olive oil
  • 1 clove minced garlic
  • 2 1/2 cups spaghetti sauce
  • 1 block Boursin cheese (5.2 oz)
  • 1 package cheese tortellini (9 oz)
  • 1 cup shredded mozzarella cheese
  • 2 cups spinach leaves

Instructions

  1. In a large pot boil water and cook tortellini according to package instructions.
  2. While tortellini cooks begin the next steps
  3. In a medium pan add 2 tsp olive oil on medium heat
  4. Add the onion and garlic, cook until transluscent (2-3 minutes)
  5. Remove onion and garlic from pan and add in ground beef
  6. Brown the ground beef and drain oil
  7. Add the onion and garlic back into the pan.
  8. Pour in the spaghetti sauce
  9. Make a well in the center and add the block of Boursin cheese
  10. Gently stir until the cheese is completely melted in.
  11. Add in the cooked tortellini
  12. Next, add the spinach leaves and cover for 5 minutes until leaves are wilted.
  13. Sprinkle the mozzarella cheese on top
  14. Add salt and pepper to taste and serve
