Pasta Bacon Salad

Our greenhouse is loaded with peppers and tomatoes right now. We absolutely love the fresh vine ripened flavor! Nothing better than seeing their cheerful colors pop up in a cold pasta salad on a hot summer day!

 

This pasta salad recipe allows me to use a lot peppers and tomatoes, and still taste a wonderful smorgasbord of flavors. The bacon, ranch dressing, pasta blend, provide a good base for many varied ingredients. We have three varieties of peppers ripe right now so all of our meals lately pop with greenhouse color and flavor.Krimson Lee peppers

Our Krimson Lee peppers. Sweet peppers but a bit hot when seeded. They are fantastic salad additions! Harvest time is busy around here. A large pasta salad like this one is easy to hold in the fridge for several days for a quick bite of sustaining carbs and healthy fresh veggies when I don’t have time to fool with lunch.

Spooning up a bowl of this salad and enjoying the flavors, texture and actual real food nutrition is as Easy as grabbing a snack bar. And much more satisfying. We don’t eat a lot of snack bars anymore. Saves us money and reduces the garbage too.

Our greenhouse is loving us with all sorts of tomatoes right now!

We are growing our first greenhouse crops this year. We rejoice in the beautiful produce it’s giving us. We have loved learning about growing organically in our greenhouse this summer. We sit in our greenhouse and gaze at the bright colors surrounding us while we discuss ‘greenhouse things’. Right now is the high harvest for peppers and tomatoes.

Pasta Bacon Salad Recipe:

This salad is very filling and will hold several days in the fridge. Make it for lunch or a heavy side with a light entre. It’s also very popular at parties.

Bacon, olives and the ranch style dressing add flavor and texture to the cute bow tie pasta. The tomatoes are wonderful pops of color and the peppers (any kind you like in all sorts of colors) make this a festive harvest dish with a satisfying crunch from the peppers.

Suggested Add ins include: sunflower seeds, hemp seeds, pumpkin seeds

 

 

Pasta Bacon Salad
Yield: 15 servings

Pasta Bacon Salad

Prep Time: 30 minutes
Additional Time: 1 hour 30 minutes
Total Time: 2 hours

Pasta Bacon salad is brimming with bacon, olives, tomatoes and peppers.  Kidney beans add low-fat protein and color. All in a yummy ranch dressing. Add your own embellishments for a premium summer salad!

Ingredients

  • one 17.6oz bag bow tie pasta
  • 1/2 lb. uncured bacon
  • one 14 oz. can organic black olives, diced
  • one 14 oz. can red organic kidney beans
  • 1 Cup grape tomatoes, chopped
  • 3 sweet peppers, or low heat peppers, like pasillas diced fine
  • 1 Cup mayonnaise
  • 3 Tablespoons ranch dry seasoning mix
  • 1 Tablespoon Johnny's dry garlic spread

Instructions

  1. Boil pasta 8 minutes until firmly done in a large pot of water with one tablespoon of coconut oil. Drain and set aside
  2. Cook bacon in strips or chopped into one inch pieces, in a large frying pan on medium heat until it is thoroughly cooked. Cool, drain on a paper towel, chop fine and set aside
  3. In a large mixing bowl put the mayonnaise, and dry seasonings and mix thoroughly
  4. Add in the olives, bacon, kidney beans and stir thoroughly
  5. Add the pasta, tomatoes and peppers. Stir thoroughly
  6. Place in the fridge, covered until cooled
  7. Salt and pepper to taste at serving

Your tomato and pepper plants look fabulous. They did wonderfully in your greenhouse. Congrats on a successful season. Pasta salad are summer favorites here. They are an easy way to get more veggies in our diet.
