Purple Potato Chorizo Burrito is a fun quick to make, healthy meal. This High-Fiber, Low-Carb, Gluten-Free stove-top dinner is perfect for garden produce. I’m using our garden purple potatoes. Any potato would work but purple potatoes are very tasty. They are also the healthiest potato!
This recipe started out as Potato Sausage Stir fry; one of our favorite meals for our freshly harvest red potatoes. But this dinner quickly morphed into a Mexican meal with Chorizo sausage and refried beans. (I’m using store-bought low carb tortillas and refried beans today.) Our homemade refried beans and Homemade Flour tortillas would make this meal even better! I was working outside all day so I needed a fast easy dinner. This is a quick 30 minutes meal, unless you make everything homemade.
Why Purple Potatoes? Purple potatoes are VERY good for you!
This is our first year to grow purple potatoes. We love and grow lots of red potatoes. We love the flavor and texture of reds. Purple potatoes are so bazaar. I looked them up and was amazed to discover how good for us these buttery flavored yummies are! Just like all fruits and veggies, the dark purple color of these potatoes signals healthy! The darker your produce, like blueberries, the more antioxidants and nutrients are in them.
We had to grow them. We did and they are so good! And very cool looking don’t you think?
I was in a raging hurry, hungry and VERY tired when I created this meal. After a busy day outside, I was not interested in long elaborate meal prep.
Dave brought our very first load of purple potatoes in and set the box on the counter. I had never cooked them before…I perked up a bit. We love skillet fried spuds with sausage and veggies. Perfect way to taste test these new spuds!
Purple Potato Chorizo Burrito Recipe:
I got out the skillet. Chorizo sausage, cheese, tortilla and refried beans were in the house. I even had sour cream (a rare treat for us) and an avocado! This meal came together with all the trimmings in 30 minutes.
Putting together a quick skillet dinner is mostly timing. I started the sausage, chopped it all up, covered it, and started chopping veggies.
The potatoes and peppers went into the skillet, I stirred it all up together and covered the skillet.
I shredded the cheese and chopped the garnishes. About 10 minutes before it was all done I pushed the veggies to the side and spooned the refried beans into the other half of the skillet. Covered it again. Smashed 3/4 of the avocado and chopped up the rest for garnish.
Set the table and serve! Easy and SO good! We put everything right into the burrito, which made them huge! So we ate our open faced. Put those cute purple potatoes on the side if you like and make the burrito smaller to roll them up 🙂 The refried beans, sausage, sour cream, and avocado are fantastic elements to this meal. The perfect foil to our purple potatoes.

Purple Potato Chorizo Burrito
Purple Potato Chorizo Burrito is a fun quick to make, healthy meal. Using chorizo and peppers brings this healthy breakfast burrito to a new level.
Ingredients
- 1 lb. Chorizo sausage
- 2 Cups diced purple potatoes
- 2 peppers, chopped small
- 1 avocado
- 1/4 Cup chopped green onions
- 1 ripe tomato, chopped small
- 4 large tortillas
- 1/2 Cup sour cream
- 1 Cup shredded mexican blend cheese
- 1 Cup salsa
- 1 14 oz. can refried beans
Instructions
- Heat a skillet to medium low
- Add crumbled chorizo and cook until done
- Add 1/2 of the peppers and all the potatoes to the skillet
- Cover and cook until the potatoes are tender
- Chop the green onions fine and set aside
- Smash the avocado into a mash and set aside
- In the skillet, push the chorizo and veggies to the side and add the refried beans on the empty space. Cover and cook an additional 10 minutes or until everything is warm and tender
- Serve on tortillas
- Top with mashed avocado, sour cream and shredded cheese
- The green onions, chopped tomato, remaining peppers and salsa are to garnish the burrito
