Chicken Bruschetta casserole is an easy and delicious dinner. This is a great weeknight meal dinner option.

This casserole has chicken, tomatoes, stuffing, and yummy Italian seasonings. The dinner can be made in a large casserole dish and is a great filling dinner. We top this dinner with shredded mozzarella for a delicious melty cheese topping.

I’ve made this casserole so many times for friends who have had babies or need a meal train dinner. It’s always a huge hit and I always get asked for the recipe.

This casserole is so easy to prepare! Just dice up the chicken and season it. Mix the rest of the ingredients into the stuffing mix and allow it to fluff up. Then we add it all in the greased casserole dish, top with cheese and bake it for 30 minutes.

  • 2-3 cups chicken or vegetable broth
  • 2 eggs, beaten
  • 2 teaspoons dried sage
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 teaspoon dried parsley
  • Salt and pepper to taste

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C).
  2. Prepare the Bread: Spread the bread cubes in a single layer on a baking sheet. Toast them in the preheated oven for about 10-15 minutes, or until they are dry and lightly golden. Alternatively, you can leave the bread cubes out overnight to dry out.
  3. Sauté the Vegetables: In a large skillet or saucepan, melt the butter over medium heat. Add the diced onion and celery, and cook until they are softened, about 5-7 minutes. Add the minced garlic and cook for an additional 1-2 minutes.
  4. Combine Ingredients: In a large mixing bowl, combine the toasted bread cubes, sautéed vegetables, and dried herbs. Season with salt and pepper to taste.
  5. Moisten the Stuffing: Gradually pour the chicken or vegetable broth over the bread mixture, stirring gently to combine. The amount of broth needed may vary depending on how moist you like your stuffing. Start with 2 cups and add more as needed. The bread should be moistened but not soggy.
  6. Add Eggs: Once the bread mixture is moistened to your liking, stir in the beaten eggs. The eggs will help bind the stuffing together during baking.

  • 2 cups shredded mozzarella
  • 1/2 cup water
  • 2 tsp chopped basil
  • 1 tbsp minced garlic
  • 1 (15 oz) can diced tomatoes
  • 1 tsp Italian seasonings
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp cracked black pepper
  • 10 oz stuffing mix (chicken flavored)

Instructions

  1. Preheat oven to 400 F
  2. Grease a 9x13 casserole dish
  3. Dice chicken and add salt, pepper, garlic powder, and italian seasonings.
  4. Stir until chicken is coated
  5. Place the stuffing mix in a large bowl and pour in can of diced tomatoes (juice included)
  6. Add water, minced garlic, and chopped basil. Mix until combined
  7. Let stuffing mixture sit for 5 minutes to fluff up
  8. Add diced chicken to casserole dish and spread in even layer
  9. Sprinkle layer of mozzarelle cheese over chicken
  10. Pour the stuffing mixture over the chicken and cheese.
  11. Top with shredded mozzarella
  12. Bake for 30 minutes uncovered until cheese is browned and bubbly.
  13. Serve and enjoy!
