Ingredients

  • 12 oz cherry tomatoes
  • 2 chicken breasts
  • 1 shallot (diced)
  • 2 cloves garlic (minced)
  • 2 balls Burrata Cheese (I used Mini Burrata balls from Costco)
  • 3 leaves fresh basil
  • 2 sprigs fresh thyme
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp crushed red pepper

Instructions

  1. In a medium skillet add olive oil on medium heat
  2. Add diced shallots and garlic to pan
  3. Cook until transluctent and fragrant, remove from pan
  4. Season front and back of chicken breasts with salt and pepper
  5. Add chicken breasts into skillet and cook 5 minutes per side
  6. Remove chicken from pan and rest
  7. Add cherry tomatoes, shallots, thyme, chicken breast and garlic cover and cook 5-7 minutes until tomatoes are soft and starting to burst.
  8. Remove cover, tear burrata balls in half and add into pan cook an additional 5 minutes.
  9. Top chicken with chopped basil and crushed red pepper flakes.
  10. Enjoy!
