Making BBQ Oysters on the Half Shell:

Shucking Oysters is an easy process. Shucking raw oysters is more difficult since the shell will resist open opening more when the oyster is completely raw.

It’s simpler to set the oysters on a hot grill and remove when the shells pop open slightly. Using a pairing knife gently open the shells and scrape the steamed oyster out of the shell.

A small pairing knife will help to twist open the shell. Heavy Gloves are recommended to protect your hands from the heat. However, grilled oysters will open much easier than raw oysters.

Shucking a cooked oyster that’s served on the half shell is a bit different than shucking a raw oyster. Here’s one method you can follow:

  1. Hold the oyster with a towel or glove to protect your hand from the heat.
  2. Insert an oyster knife or a small, sharp knife into the hinge of the oyster, where the top and bottom shells meet.
  3. Twist the knife to break the hinge and open the oyster.
  4. Run the knife along the top of the oyster to detach the meat from the top shell. Be careful not to lose any of the juices, which are known as the “liquor.”
  5. Discard the top shell and serve the oyster on the bottom shell.

Shucking cooked oysters can be dangerous if you’re not experienced. The oysters should be opened when they’re still hot since this is easier then opening raw oysters. Wear heavy leather gloves to avoid the risk of getting burned.

How to BBQ Oysters

Ingredients

  • 12 oysters (fresh in the shell)

For the Butter Sauce:**

  • 1/4 cup unsalted butter, room temperature
  • 2 cloves of garlic, minced
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh herbs (such as parsley, chives, or thyme)
  • Salt and pepper, to taste

Instructions

Preparing oysters for the barbecue:

    1. *Shuck the oysters. This is the process of removing a raw oyster from its shell. Hold the oyster firmly with the towel or a sharp knife. Insert the tip of the knife into the hinge at the back of the oyster. Twist the knife to break the hinge and open the oyster. Carefully slide the knife along the inside of the top shell to release the oyster meat.Opening Oysters
    2. Once the oysters are shucked, rinse them under cold water to remove any sand and debris.
    3. Rinse the bottom shells.
    4. Place the oysters Back on the bottom rinsed and clean shell to grill on the half shell.
    5. Place them on a bed of ice to keep them fresh and chilled.
    6. To make the butter sacue: In a small bowl, mix together the butter, garlic, lemon juice, and chopped herbs.
      Season the butter mixture with salt and pepper to taste.
      Preheat the grill to high heat.
    7. An easier way to shuck oysters is to cook them whole until they open slightly. Now shuck them as above wearing heavy gloves to protect you from the heat.
    8. Rinse the oyster and shell. Place the oyster on the bottom shell with the rounded side facing up.
    9. Place the oysters on the grill. Bbq Oysters
    10. Close the grill and cook for 2 to 5 minutes, until the oysters start to bubble and the edges begin to curl. Be careful not to overcook them, as they will become rubbery.
    11. Remove the oysters from the grill and top with the butter and herb mixture, as desired.
      Serve immediately and enjoy!

*Note: Be careful when handling and shucking the oysters, as the shells can be sharp. It is recommended to use an oyster knife or a heavy-duty kitchen towel to hold the oysters while shucking them. And be sure the oysters you are using are fresh and safe to eat, if you have doubts, you can check with a professional or discard them.

Classic butter sauce For Grilled Oysters Rockefeller:

Ingredients:

1/4 cup unsalted butter
1/4 cup finely chopped shallots
2 cloves of garlic, minced
2 tablespoons chopped fresh herbs (such as parsley, thyme, and tarragon)
1/4 cup breadcrumbs
2 tablespoons anise liqueur (such as Pernod or Herbsaint)
Salt and pepper, to taste
Instructions:

In a small saucepan, melt the butter over medium heat.
Add the shallots, garlic, and herbs, and cook until the shallots are translucent.
Stir in the breadcrumbs and cook for 1-2 minutes.
Remove the pan from the heat and stir in the anise liqueur.
Season the sauce with salt and pepper to taste.
Once your oysters are grilled, you can spoon the sauce over each oyster, or you can serve it on the side for dipping.
