This is one of THOSE dinners….the ‘I am in a hurry what’s in the cupboard?’ meals. And wow it’s turned out great! So I’m sharing this creation. It’s simple and done in under 30 minutes if you want.

Pork tenderloin in pepper sauce is really good and makes a fast meal when the pork is cut into medallions (pieces) and cooked in the instant pot. This is my second pork tenderloin in the instant pot.

This one turned out so well I REALLY hurried to get it done ahead of dark so I could catch the afternoon light. This meal was a squeaker to photograph!

I originally made the pepper sauce as a marinade. I thought to cook it all together in the instant pot after a couple of hours in the fridge.

However, Hubby came home hungry two hours ahead of dinner time. “Well, let’s get it on the table!” So, The meat was immediately browned and cooked in the sauce. I locked the instant pot down and 12 minutes of cooking later a quick release and dinner is served. So easy!

And that’s how the marinade became a delicious pepper thyme cooking sauce. Who needs a marinade when cooking under pressure anyway? Maybe next time I’ll have a couple of hours to marinade the meat and let you know if we notice a difference.Pork Tenderloin In Pepper Sauce

Load your food processor  or blender with fresh tarragon, thyme, garlic and ginger…pulse it several times. Add the chicken paste and pulse some more. And then add the stars of this saucy meal.

Tiburon and Krimson Lee are good roasting peppers. But also create a slight smoky sweet flavor onced cooked in this sauce.

I used Dave’s Garden peppers. Tiburon and Krimson Lee peppers are SO wonderfully flavored. In the grocery you’ll find pasilla or other roasting type peppers. They are a two on the heat scale and the flavor is distinctly NOT a sweet bell pepper.

Roasting peppers are perfect for robust meaty dinners like this one. Find them!! I didn’t roast them this time. I chopped them up and threw them into the food bowl raw. Seeds and all.

They were fully flavorful in this Pork tenderloin dinner and not much pepper heat either. If you want the heat move your peppers up to raw jalapeno or Bangkok peppers with the seeds.Instant Pot Pork Tenderloin Served

Tips:

  1. I sliced the pork and immediately added it in with the sauce. Since the instant pot boils the sauce this is a safe practice. However, not boiling the sauces used for meat marinades and then using the sauce for food without boiling it is unsafe and should never happen.
  2. Be SURE you brown the meat on all sides. It may take a few minutes but it’s very worth it. The gain on flavor and juiciness is amazing.
  3. Be Sure to pour all the sauce into the instant pot before sealing the lid. Otherwise the meat may burn to the bottom. And you WANT the flavor of that sauce driven right into your pork. So yummy!Instant Pot Pork Tenderloin On A Platter

Pork Tenderloins With Pepper Sauce

Instant Pot Pork Tenderloin Medallions

Prep Time: 20 minutes
Cook Time: 12 minutes
Total Time: 32 minutes

Instant Pot Pork Tenderloin in our incredibly flavorful Pepper Sauce. A very easy, quick and delicious pork dinner prepared in your food processor or blender and the instant pot. Have it on the table in under an hour!

Ingredients

  • 2 lbs pork tenderloin
  • 2 large Fresh cloves garlic
  • 1 inch piece of fresh ginger peeled and chopped
  • bunch fresh tarragon
  • bunch fresh thyme
  • 4 or several pasilla(or any roasting type) peppers seeds and all
  • 1 Tablespoon soy sauce or tamari
  • 2 Tablespoons chicken bouillon paste
  • 2 Cups water

Instructions

  1. Prepare all ingredients(except water) and put into food processor.
  2. Pulse the processor until a paste or thick sauce is formed
  3. Add water (Don't go over the fill line for liquids on your processor)
  4. Pulse until blended.
  5. Slice the tenderloin into one inch thick medallions
  6. place the medallions into a 9 x 9 inch glass casserole
  7. Pour the sauce (You'll have about 2 cups) over the medallions Pork Pieces In Pepper Sauce
  8. Set the instant pot to saute more and wait until the instant pot says hot.
  9. With tongs remove the pork pieces to the instant pot.
  10. Brown the pork pieces 2 minutes on both sides.Brown Pork Pieces
  11. Set the instant pot to Manual for 12 minutes.
  12. Add the pepper sauce.
  13. Seal the lid. Once cooked quick release and let rest until ready to serve.Pork Tenderloins With Pepper Sauce
  14. Release the pressure and serve with roasted potatoes or cooked rice.

Notes

Note use your food processor or blender to make the sauce. Otherwise the thyme and tarragon sticks (while flavor builders) must be removed to avoid sharp points in your finished dinner.
