Banana bread is a likely recipe for overripe bananas. Everyone knows that. I make banana bread in various recipes, often. Our Healthy Banana Bread Recipe, blueberry banana bread and Chocolate Chip banana muffins are all worth a look for scrumptious desserts, snack breads and breakfast ideas!
This time, I had the overripe bananas. AND, I needed to use my Medjool dates and pecans too. Buttermilk sat in my fridge for a homemade Caramel sauce I planned to make. Putting them all together created one amazing dessert!
The Homemade Caramel Sauce makes this Banana Date Bread seriously indulgent. BUT! 1/2 Slice of this bread on a plate with an ooze of that lovely sauce and a fork to eat it with is all you really need. It’s very filling and satisfying.
OR, Don’t add extra caramel sauce at all! (although it’s very, VERY good) and save yourself from some of the extra sugary calories. This bread is delicious all by itself!
Caramel Pecan Banana Date Bread is very well balanced in it’s flavors. The dates, bananas, caramel sauce and Pecans come together beautifully. Pouring the caramel sauce over the top of the bread is not over the top rich. It just tastes Jim Dandy GOOD!
For true decadence, try whipping up some heavy cream to dollop over the top(or ice cream). We didn’t do that because it’s totally unnecessary for the enjoyment of this yummy Banana Date Bread.
This recipe is full of, good for you, ingredients. Bananas, dates, pecans, coconut oil…the caramel sauce is homemade so you know whats in it. In this case, buttermilk, butter and sugar mostly. Not too bad for you in small doses. Absolutely fantastic buttery caramel flavor! Give it a try!
You may have a big food processor or blender. If so you can do this whole recipe in that one container. I needed to use a big bowl for the final stages due to my puny food processor bowl.
This is a filling bread. You may only need 1/2 slice on a plate (like I did) with some sauce to make a scrumptious dessert. So you may get way more than 12 servings out of this recipe. If you want two loaves you will need to double the batch for bread. One batch of my homemade Caramel sauce should still be adequate for two loaves.
Caramel Pecan Banana Date Bread Recipe:
Make the Homemade Buttermilk Caramel Sauce. Set aside until needed
For the banana bread:
- Pre heat oven to 350 degrees
- Pour 1/2 Cup of the flour into the bottom of a food processor (Preferred!-try a blender in a pinch) Add the Roughly chopped Medjool dates.
- Pulse until the dates are very small but don’t let them form a ball.
- Add the bananas in pieces and pulse a few times.
- Add the eggs and vanilla. Pulse a few times to mix.
- Add 1 Tablespoon of the caramel sauce. Pulse a few times.
- Add the coconut oil. Pulse until all ingredients are thoroughly mixed.
- Pour the remaining flour, baking soda and cinnamon into a large bowl and whisk together.
- Add the wet ingredients and chopped pecans and mix until just combined
- Pour the batter into a greased 9 x 5 loaf pan
- Bake for 45 minutes or until a toothpick in the center comes out clean.
- Cool on a baking rack until pan is handle-able. Remove from pan by sliding a knife or spatula around the sides and lifting slightly to free it from the pan without breaking it. Cool on the rack until slightly warm to room temperature. (You can stop right here is you want a healthy banana bread. Instead of caramel sauce use 1 Tablespoon honey in the bread)
Candy the reserved pecans in a sauce pan over medium heat with 4 tablespoons caramel sauce.
The final steps:
- Pour the remaining Caramel sauce( to taste) over the banana bread. Let it sit until the sauce soaks in and forms a glaze.
- Top with the candied chopped pecans and pour additional caramel sauce over the nuts, as desired. Let sit until it sets up.
- Serve with caramel sauce on the side as a dessert.

- 6 Medjool dates-roughly chopped
- 2 bananas-very ripe

- 1/2 Cup Caramel Sauce, more for serving on the side
- 1/2 Cup chopped pecans(reserve 1/8 Cup for the topping

Notes
The timing on this recipe assumes you are candying the pecans while the bread bakes and you made the caramel sauce ahead.
