  • Cool completely in the muffin tin—this ‘must do’ step ensures the filling sets perfectly and prevents breaking. It will add time to the process but it is necessary.
  • Store leftovers in an airtight container for up to three days. Reheat in a toaster oven or regular oven for that just-baked texture.

These mini or full-size muffin desserts (or appetizers) deliver all the comfort and flavor of a homemade pecan pie—without the fuss of making a full pie.Perfect for holiday parties, dessert buffets, or cozy weekend baking, these adorable little bites are simple, sweet, and addictive. And great for party trays! This recipe has instructions for both mini and full size muffin recipe.

Ingredients

  • 1 pie crust (or homemade or refrigerated)
  • ½ cup chopped pecans
  • ⅓ cup brown sugar
  • 2 tbsp maple syrup (or honey)
  • 1 egg
  • 1 tsp vanilla extract
  • 1/2 tsp. Cinnamon
  • Pinch of salt
  • Drizzle with Caramel Sauce

Instructions

  1. Preheat oven to 350°F.

FOR 12 MINI MUFFINS:

  1. Lightly grease a mini muffin tin.
  2. Cut pie crust into 2-3 inch circles (a biscuit cutter or glass works great).
  3. Press into each muffin cup.
  4. Mix filling: In a bowl, whisk together brown sugar, maple syrup, egg, vanilla, salt, and cinnamon. Stir in chopped pecans.
  5. Spoon filling into each crust (about 1 tablespoon each).
  6. Bake for 20-25 minutes, until crust is golden and filling is set.
  7. Cool completely before removing from pan. (They firm up as they cool.)
  8. Drizzle with caramel or melted chocolate

FOR 6 REGULAR SIZE MUFFINS:

  1. Lightly grease a 6 hole muffin tin.
  2. cut crust into six evenly sized 3.5” to 4” circles. press the dough circles into the muffin holes. TIP: They will have folds. Cut the excess with scissors And press together so tops are even thickness and go all the way to the top of the tin.Cut Pie Dough To Fit Pan

Filling:

  1. In a medium bowl or food processor, combine the brown sugar, honey( or maple syrup), vanilla, egg, cinnamon and salt. blend well and fold in chopped nuts.

  3. Bake 25 minutes or until crust is golden and filling is set.
  4. Cool the muffins IN THE MUFFIN TIN so they completely set before removal.(they firm as they cool).

this is a great recipe for an holiday appetizer. Make is as mini bites. To speed up the process use a ready made crust.
