  • 1 tbsp olive oil
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tsp Cajun seasoning (plus more to taste)
  • ½ tsp paprika
  • ¼ tsp black pepper
  • Optional: pinch cayenne
  • ½ cup heavy cream
  • ¼ cup cream cheese (cubed)
  • Salt to taste
  • Optional garnish: green onions or parsley

Instructions
