Summer is the season for grilling and we enjoy grilled chicken so much. It’s easy to prepare juicy and flavorful chicken when you follow the important techniques of grilling; and, it yields a versatile meat that can be enjoyed alongside so many sides.

What can I serve with grilled chicken?

One of the fantastic things about chicken is that it is so versatile in flavor, making it extremely easy to enjoy with endless sides and dishes. This peach mango grilled chicken can be served with so many different dishes and sides, here are some of our favorites.

To make this marinade from scratch using fresh peaches and mangoes

  • Put the peaches and mangoes into a blender and puree them, sans the pits and skins of course.
  • To thicken the puree, heat on the stove, sweeten with your favorite sweetener and bring it to boiling.
  • Add 1 Tablespoon cornstarch dissolved in a little water, boil the sauce a minute or so until it thickens a bit and looks rather clear.
  • Remove from heat and cool to room temperature before finishing the marinade. Now add the other marinade ingredients and whisk until smooth.

How do you make the best grilled chicken breast?

Grilling chicken can be intimidating, but it’s a very simple process that anyone can master. We are sharing our best tips and tricks for juicy, flavor filled peach mango grilled chicken that has the perfect char every time.

  • Pre-marinate your chicken breast to help lock in the flavors and infuse more liquid. This can also assist in creating an outer crust that adds flavor and locks in the internal juices.
  • Leave the chicken on the grill grates until they lift easily off at turning. If the chicken sticks it’s not quite ready to turn.
  • Once your turn the chicken, the second side will cook faster than the first. Be careful not to leave it on too long or it may dry out.
  • Chicken needs to be 165 degrees F internally to be safe to eat. Make sure you use a thermometer to check the thickest part of the chicken before removing.
  • Allow the chicken to rest at least 5 minutes. It will continue to cook a bit and this also locks in the juices and keep the meat moist and flavorful.

Making a peach mango sauce or salsa

To make this grilled chicken ridiculously easy just whip up the marinade. Reserve some and keep it in the fridge for brushing on during grilling or even a dipping sauce at serving. Pour the remainder on your chicken breasts and let them sit covered two hours (all day if you want) in your fridge. When the grill is heated up. Cook the chicken 10 minutes a side or until done. 

TIP: Brush with extra marinade as desired. Retain some of the marinade for a dipping sauce, or pour a bit over a side dish. It’s so good!

Peach Mango chutney

If you would like to make a chunky salsa to top your grilled chicken with, dice up fresh mango and peaches, cilantro, a small red onion, and add a pinch of salt.

This is a delicious finish that elevates the chicken beautifully. The textures and fresh flavors bring a refreshing element to the smoky char of the chicken. Peach mango grilled chicken can be prepared with a saucy marinade, or a fresh salsa style scoop of fruits.

Yield: 3 grilled marinated chicken breasts

Balsamic Peach Mango Grilled Chicken

Balsamic Peach Mango Grilled Chicken is juicy and delicious! The balance of smoky charred chicken and sweet herb infused peach mango sauce is perfect for a warm summer dinner.

Ingredients

  • 3 boneless skinless chicken breasts
  • For the marinade:
  • 4 Tablespoons balsamic vinegar
  • 2 Tablespoons dijon mustard
  • 3 Tablespoons peach mango, orange preserves
  • 2 Tablespoons gourmet asian sauce

Instructions

  1. Defrost the chicken if frozen
  2. Put chicken into an 8 x 8 casserole dish (or gallon zip lock bag)
  3. Whisk all the marinade ingredients together and pour over the defrosted or fresh chicken
  4. Cover and marinate at least 2 hours
  5. Grill at 375 degrees for 10 minutes.
  6. Turn the meat and brush with the marinade.
  7. Grill another 10 minutes; check it for doneness, and serve.

*This recipe can be made with a fresh mango and peaches to make a delicious chutney. Adding cilantro, lime juice, and onions will deepen the flavor beautifully.
