Stuffed tomatoes are an easy no-bake recipe with lots of protein. This is a delicious make ahead low carb appetizer or salad replacement.

The Tomatoes:

TIPS:

  • I used ‘On the vine’ tomatoes in the pictures you see here. For the very best flavor you need good vine ripened tomatoes. And make sure they are actually ripe. Not just gassed an appealing color.
  • Of course, if you grow your own tomatoes like we do you will have this just right. Nothing beats garden grown tomatoes. 🙂
  • Large tomatoes are a bit much as an appetizer. Use cherry tomatoes for a low carb appetizer. It will also stretch the yield of this recipe considerably.
  • The larger stuffed tomatoes make an excellent side dish, brunch or lunch recipe or salad replacement.
  • When making the tomato cups be sure to completely dry them out before stuffing them. Water in the tomato will get messy and dilute the filling.

Tips For the Tuna Filling:

  • Please use the fancy white albacore tuna packed in water. And drain out the water in the can. It will give you the best flavor and add no oiliness to the filling. Oils tend to separate the filling since the vegetables are full of water.
  • For best density, smoothness and creaminess of this filling follow the recipe instructions. If you do not squeeze out the extra liquid from your veggies you will have a loose separating filling. That can get messy and dilute the flavors.
  • Feel free to try your favorite seasonings and let us know what you do with this filling to make it your own. We love your feedback!
  • This filling will last in the fridge several days if kept in an airtight container.
  • The peppers I used are poblanos. Any pepper is fine adjust the spice to your preference.

Make these adorable stuffed tomatoes with a Low-​Sugar, low carb, Gluten-​Free tuna filling. Pop these easy to make no cook cuties onto a party platter or serve them individually on a small plate as a side dish.

Ingredients

  • 12 tomatoes (vine ripened preferred) OR (24 cherry tomatoes)

Tuna Filling:

  • 1 large cucumber seeded, chopped
  • 1/2 Cup yellow onion, chopped
  • 3 Tablespoons garlic, minced
  • 2 large peppers, seeded and chopped
  • 3 oz. cream cheese
  • 1 tsp. salt
  • 2 7 oz.cans tuna drained and flaked (fancy white albacore in water pack preferred)

Garnish Ideas:

  • 1/4 Cup sweet pickle relish
  • 1/2 tsp. smoked Paprika
  • 1 Cup peppers, minced

Instructions

Making the filling:

  1. Rough chop all veggies to fit your food processor,
  2. Add the chopped cucumber, pepper, onion and garlic into your food processor and shred it all.Stuffed Tomato Recipe
  3. Let the shredded veggies sit in a bowl with salt mixed in for 20 minutes to encourage extra juice to separate

  5. Put the all the veggies into your blender and blend together until they form a smooth sauce.
  6. In a large mixing bowl put the cream cheese and mix it with an electric mixer until smooth add the veggies and tuna. Mix until it forms a smooth paste. Tuna Filling-Tuna Stuffed Tomatoes

Assembling the tomato cups:

  2. Fill the tomatoes after they dry out.

CHICKEN stuffed tomatoes:


You can certainly replace the tuna with canned chicken if you prefer. OR use our chicken spread recipe for a filling. It is also a good choice for stuffed tomatoes.
