I woke up this morning craving something sweet for breakfast but not too heavy. The sun is shining and it’s a beautiful day. I wanted to make a special breakfast goodie.
The first thing I do in the mornings is head straight for the coffee pot. I decided on cinnamon coffee cake to compliment my first morning cup of Java. Best breakfast ever! It’s full of crumbling brown sugar cinnamon streusel. I’ll get up for that. It’s almost like having a cinnamon roll but with fewer calories 🙂
I had no idea there are so many different takes on coffee cake. I had to do a little digging to find a recipe that did not involve a cake mix. But I finally found just the right one.
This coffee cake is easy to make and came out so yummy. I tweaked the recipe to include my favorite baking oil and flavoring for baked goods. You should too. It’s so much better.
We ate it just like this, just plain, and we loved it. Go ahead and whip up a batch of Buttermilk caramel sauce. Or whipped cream, or even…. French vanilla Bean Ice cream if you’re serving it for dessert. Or your next coffee klatch 🙂

Keeping Christmas breakfast for a larger group or special day easy? This coffee cake recipe may be just the thing. I made this for our Christmas breakfast group last year and it was perfect. This recipe makes 18 small servings.
This coffee cake worked out well for our coffee drinking adults. I made it the night before and wrapped it up. It was delicious reheated with butter. We had leftovers to munch later too.
Our Blueberry Apple overnight bread pudding or our overnight sausage breakfast casserole are both made the night before. Upon waking Christmas morning you just pop it in the oven and cook. So nice to be free to supervise gift openings( or do your hair or…?).

Delectable Coffee Cake Recipe:
This cinnamon streusel coffee cake stays moist and delicious at room temperature in an airtight container for several days. Delectable coffee cake is a good traveler in the picnic basket or lunch box. Make a batch for a snack cake, potluck or dessert. So yummy!
BUT this recipe does make a LOT. If you don’t want coffee cake around all week you might want to cut the recipe in half.
- Make it in a 8 x 8 pan.
- Bake it for 20 minutes.
- Yields 9 servings.
Preheat oven to 350 Degrees F.
- In a large mixing bowl. Whisk Together oil, eggs, vanilla, almond extract, and milk.
- In a medium bowl combine granulated sugar, all purpose flour, baking powder and salt.
- stir the egg mixture together with the flour mixture. If the mixture comes out too thick, add milk until desired consistency.
- Pour half the batter into a greased 9×13 pan.
- In a medium bowl, prepare streusel by combining brown sugar and cinnamon.
- Sprinkle half of streusel on top of the batter.
- Top with remaining batter and then sprinkle the remaining streusel on top.
- Drizzle with melted butter.
- Baking time 30 minutes. Bake the cake until a toothpick inserted into the center comes out clean.
- Cool completely on a wire rack in the pan and serve.
Delectable Coffee Cake is very dark on top. The streusel bakes deeply when you use dark brown sugar as I did today. A lighter brown sugar will be a lighter golden brown when baked.
