This recipe is easy to make, quick to bake and fast to set. This dessert works for our family because it’s really good and you don’t have to wait overnight to eat it!
After only 30 minutes in the oven, just cool it down and cut it up! I love that the cheesecake sets up as it bakes and cools without a long refrigerator time. Our cheesecake desserts often suffer from impatient people who won’t wait for them to set!
Don’t let all those steps scare you off. This dessert goes together quick. There are a few steps for each layer, that’s all. Once you get started, In under an hour your family can be eating this yummy treat.
The coconut oil and butter are interchangeable in this recipe. I usually work with them softened or melted. I have used both quick oats and regular rolled oats in this recipe. both work. The little extra kick of flavor from the organic apple Instant oat packets is nice though.

Fresh Apple Cheesecake Bars recipe needs to go onto your Baking schedule. This delightfully easy dessert is a perfect way to use up your fresh or frozen apples and treat the family to a sweet bite of decadence.
Ingredients
- 2 1/2 cups all-purpose flour
- 1/2 cup light brown sugar, packed
- 1/4 teaspoon salt
- 3/4 Cup melted coconut oil
- 2 (8 oz.) packages cream cheese, softened
- 1/2 cup plus 2 Tablespoons Sugar
- 2 large eggs
- 1 teaspoon vanilla
- 3 apples, cored and chopped
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon apple pie spice
- Crumb Topping:
- 1 cup all-purpose flour
- 1/4 Cup Flax meal (optional)
- 1 cup light brown sugar, packed
- 1/2 cup quick-minute oats(I used apple flavor)
- 1/2 cup (1 stick) unsalted butter, softened
Instructions
- Preheat oven to 350 F degrees.
- Grease a 9 x 13 pan with butter or coconut oil
For cheesecake bars:
- In a medium bowl, combine flour, brown sugar, and salt.
- Mix in the melted coconut oil until mixture is crumbly.
- Press mixture evenly into prepared pan bottom only
- Bake for 15 minutes or until edges are lightly browned.
For the cheesecake filling:
- In a large bowl, using an electric or stand mixer, mix softened cream cheese on medium speed until smooth.
- Mix in 1/2 cup Sugar, eggs, and vanilla until smooth.
- Pour cream cheese mixture over warm crust.
For the crumble topping:
- In a small bowl, mix together flour, brown sugar, and quick-minute oats.
- Using a fork, cut in the softened butter until the mixture is crumbly
- Set aside.
- In a small bowl, combine chopped apples, remaining 2 Tablespoons Sugar, ground cinnamon and apple pie spice.
- Spoon apple mixture over cream cheese mixture.
- Sprinkle crumble topping over apple mixture.
- Bake for 30 minutes or until cream cheese mixture is set.
- Let cool completely in baking pan before cutting into squares
