The direct translation is literally ‘green chili’. It is a Mexican stew made from a green chili pepper and tomatillo sauce, cooked with meat until it is fall apart tender and juicy. Pork is usually the meat of choice, but chicken is another popular option.

The meat can be shredded and loaded into tortillas, casseroles, or virtually any presentation you desire.
Chili verde is simply the way the meat is seasoned and prepared. How you enjoy it, is entirely up to you.
Do you need to sear the meat for chili verde?
Searing the meat for Instant Pot chili verde is largely a personal choice and not necessary for this simple Instant Pot recipe. Searing or browning the meat will help to enhance the flavor. It creates a beautiful crust that locks in the natural juices of the meat, which will also keep the meat juicy and moist.
If you sear the meat beforehand, deglaze the pan with the salsa verde and chicken broth. This will bring in the tasty bits of chicken and help to liven up the dish.
Instant Pot Chili Verde Recipe
After you sear the meat, lock the lid and go visit with the family for an hour and let the pressure cooker do the work. Such a nice way to make dinner.
Jalapeño and cilantro are both very good garnishes to this meal if you have them. You can also top it with sour cream, queso cheese, and fresh pepper slices.
- Cut up the pork and rub in the seasonings
- Load the seasoned pork into the instant pot and brown it on all sides to really bring out the flavor of the meat
- Pour in the two ingredient sauce and lock the lid

We love this flavorful dinner because it can be enjoyed all on it’s own as a low carb, high protein meal. However, it is also a wonderful main course for a Mexican dinner with a variety of scrumptious sides. Here are some of our favorite ideas for how to enjoy this Instant Pot green chile pork.
- A dish of homemade refried beans or pinto beans
- A side of cilantro lime rice
- Mexican street corn
- Green chili rice casserole
- A side of tortilla chips
A wonderfully flavorful Mexican recipe the whole family will enjoy. KETO compliant and gluten free. This recipe can also be used to make a meat base for(not gluten free or KETO)tacos, burritos and enchiladas.
- 2 lbs. boneless Pork shoulder
- 1 tsp. salt
- 1/2 tsp. pepper
- avocado oil
- 2 cups salsa verde
- 2 cups chicken broth
- fresh cilantro and Jalapeño for garnish
Cut meat into several large pieces
rub the salt and pepper into the meat pieces.
Set the instant pot to sauté on high.
add the avocado oil.
Using tongs place the meat pieces into the instant pot so each piece of meat touches the hot bottom of the pot.
Mix the salsa and broth together and set aside.
Turn the meat as it browns until all sides are seared.
Pour the salsa mixture over the meat.
With the tongs move the meat pieces to unstick them from the pot bottom and completely coat the meat in the salsa verde. Press the cancel button.
Seal the locking lid on the instant pot and set the instant pot to manual high pressure for 55 minutes.
Once the instant pot is done. Natural release for ten minutes. Then quick release.
Serve the meat in chunks or shredded as you prefer.
Garnish with the peppers and cilantro.
