Recipe Notes on Cabbage Beef stew:
Cabbage is an AMAZINGLY healthy vegetable with only 22 calories per cup. So it makes a fantastic low cal and high fiber soup base.

Ingredients:
Cabbage Stew With Sausage:
Use any smoked sausage you have on hand that pairs well with hamburger OR REPLACE the hamburger and use a chorizo or other spicy sausage for fun.
I have used polish franks in this recipe. The are a mild sausage that pairs well with the hamburger and add their own mild flavor to the stew.

Cabbage Stew with Beans:
This healthy soup is full of fibery beans. In this recipe I use the cannoli and garbanzo beans. You can use red kidney beans or even black beans if you have them on hand.
All beans are really good for you and shouldn’t mess up the flavor profile of this great recipe no matter which you choose.
The beans have a lot of staying power due the the added protein and fiber beans offer. They do add carbs. But beans are really good Hi Fiber carbs so unless you are on a carb restricted diet this soup will work well for you.
Add Sun Dried Tomatoes:

I now make my own Sun Dried Tomatoes . And they are EXCELLENT. I use them in so many ways!
I remember vaguely years ago when sun dried tomatoes became the new cool kid on the recipe band wagon. Not being big on expensive gourmet additions in my pantry at the time…I passed them by…
This time I’m putting Sun Dried Tomatoes in Cabbage Beef Stew. I usually use canned, stewed or diced tomatoes in my soups and stews.
Putting in the Sun Dried Tomatoes adds a whole new flavor level to this recipe.

Most of you are probably not surprised. I’m very late to the party on this amazingly tasty and useful ingredient.
All I will say is if you are like me the price may be holding you back. Go ahead and give them a try.


This particular beef and cabbage stew uses cannellini beans, garbanzo beans and smoked sausage.
How to make this cabbage stew in the Electric Pressure cooker:
Put this recipe into your regular soup menu rotation. It’s a filling meal you can feel really good about. And it’s so tasty. Beef cabbage soup is a healthy and easy meal.
You can make this soup in your instant pot on the slow cooker function as mentioned above OR use the soup function.

chop celery into small pieces. peel carrots Slice carrots into bite sized pieces core and chop cabbage into one inch pieces. Set your instant pot to sautè function. Pour olive oil into instant pot. brown hamburger stirring occasionally to prevent sticking. slice sausage into 1/4 inch medallions. Brown with hamburger. chop sun dried tomatoes into fine pieces. pour all the chopped vegetables into the instant pot once meat is browned. add all canned beans to the electric pressure cooker. pour Worcestershire sauce into the instant pot. Add water to the cabbage beef stew. Stir the cabbage stew. Lock the lid and set the instant pot to soup function. Quick release and serve.
- First brown the hamburger
- Now add all the other prepared ingredients to your instant pot.
- Lock the lid and set the pot to soup for 30 minutes.
- Quick release and serve.

Don’t have an instant pot and need to get this recipe done in under an hour? Use your stove top. A large stock pot or dutch oven will work great to make this soup.

Ingredients
- INGREDIENTS
- 1 lb. Hamburger
- 1 lb. smoked sausage
- 2 Tablespoons olive oil
- 1 small head green cabbage
- 2 ribs celery
- 1 large carrot
- 1 15 oz. can garbanzo beans
- 2 15 oz. can cannellini beans
- 1/2 Cup Sundried tomatoes
- 2 Tablespoons Worcestershire Sauce
- 4 Cups water
Instructions
FOR THE CROCK POT.
- Dice up the celery and carrots.
- Core and Chop cabbage into one inch pieces.
- Brown hamburger and sausage.
- Pat dry the sun dried tomatoes and chop into small pieces.
- Add all the vegetables into your crock pot.
- Add the canned beans and Worcestershire sauce into your pot.
- Add water and cook on high for four hours.
FOR THE INSTANT POT:
- Dice up the celery and carrots.
- Core and Chop cabbage into one inch pieces.
- Set your instant pot to sautè.
- Brown hamburger and sausage.
- Pat dry the sun dried tomatoes and chop into small pieces.
- Add all the vegetables into your crock pot.
- Add the canned beans and Worcestershire sauce into your pot.
- Add water and cook on soup function for 30 minutes.
FOR THE STOVE TOP: In a stock pot or dutch oven
- Brown the hamburger and sausage over medium low heat.
- Chop and dice the celery and carrots into small pieces.
- Core and chop the cabbage into one inch pieces.
- Pat the sun dried tomatoes dry and chop fine.
- Add all the prepared vegetables into your stock pot.
- Pour in the beans and Worcestershire sauce.
- Add water and stir.
- Cook on medium until the soup boils.
- Reduce heat and simmer for 30 minutes.
- Stir occasionally to avoid sticking to pan bottom.
Notes
At serving shake freshly grated Parmesan cheese over the soup.
