Fresh ginger is phenomenal in baked goods like this quick bread, but in a pinch you could use dried, ground ginger. To prepare the fresh ginger root for baking begin by selecting a plump, fragrant chunk and cut off the ends.

For this cinnamon spice apple bread we used peeled and minced fresh ginger. Peel the outer skin of the ginger with a potato peeler, cut lengthwise into thin strips and line them up. Mince the peeled strips by cutting into tiny strips, turning the strips, and cutting end to end in small sections.

Once the ginger is diced into small pieces, gather them into a pile and use the knife to carefully chop them into a fine mince.

Is butter or oil better for quick breads?

The name quick breads came about organically, because these breads are relatively quick to make. They use baking powder and baking soda for the leavening agent rather than yeast. Quick breads require no kneading or proofing, and are often referred to as ‘cake breads’.

Most quick breads use fresh fruits to sweeten and and bring flavor, which makes them very similar to European fruit cakes. They also include fresh, natural ingredients to add intense flavor and color.

Healthy fresh ginger is one of those flavors. Fresh ginger is a lovely flavor enhancement in apple recipes. Our fresh apple spice muffins also include fresh ginger, and we enjoyed them so much it sealed the deal for fresh ginger going into this bread too! What flour is best to use for quick breads?

All purpose flour is best to use for general baking like quick breads, muffins, and cookies. All purpose flour is a balanced blend that will yield soft, fluffy baked goods that have a strong structure and satisfying texture.

Cake flour would be too soft and unable to withstand the heavier add-ins of quick bread, while a high protein bread flour will likely yield a loaf that is dense and firm in structure.

How to you defrost a quick bread?

When you are ready to enjoy your cinnamon spice apple bread remove it from the freezer, take it out of the plastic bag and set it on your counter to begin thawing. Once the loaf has begun to warm and thaw a bit, transfer it still wrapped to your fridge.

The bread will likely take 24 hours to fully thaw. Once it is thawed you can place it in your oven to warm through before enjoying.

This cinnamon spice apple bread is even easier to make with the right kitchen tools. The Cuisinart food processor has been a staple tool in our homes for years now, and it makes recipe prep a breeze.

The apples, ginger, and nuts can of course be hand chopped if you prefer; It will just take a bit of time.

Recipe yields one 9 x 4 loaf

  • Whisk the dry ingredients together in a bowl.
  • Now stir together the wet ingredients (make sure to melt your coconut oil).
  • Combine the wet and dry ingredients and set aside.
  • Put the metal blade in your food processor.
  • Peel the ginger root
  • Core the apples and cut them into slices that will fit through your small feed tube.
  • Pour in the walnuts and ginger while the processor is on for about 10 seconds.
  • Put the apple slices quickly into the small feed tube and pulse a time or three until you have the size apple chunks you prefer. Don’t overdo it or the nuts will be dust and the apples will be mush.
  • Empty your food processor work bowl contents into the combined batter and stir until just mixed.
  • Pour into your oiled 9 x 4 baking pan. Bake one hour or until a toothpick comes out clean.

Ingredients

  • 2 Cups Flour
  • 11/2 tsp. baking powder
  • 1/4 tsp. salt
  • 2 tsp. cinnamon
  • 1 Cup maple syrup
  • 1 tsp. vanilla extract
  • 1 tsp. almond extract
  • 2 eggs
  • 1/2 cup melted coconut oil
  • 2 Cups apples chopped fine
  • 1/2 inch long piece of fresh ginger peeled and minced
  • 1/2 Cup of walnuts- chopped fine

Instructions

  1. Preheat Oven to 350 degrees F.
  2. Whisk together flour, baking powder, salt, and cinnamon in a medium bowl.
  3. Whisk together the sugar, eggs, oil, and extracts.
  4. Add the apples, ginger and nuts to the wet ingredients and mix well.
  5. Add in the flour mixture and mix until just combined.
  6. Pour the batter into two oiled 9x4 loaf pans
  7. Bake 45 minutes.
  8. Cover with foil and bake an additional 15 minutes or until toothpick come out clean.
  9. Cool in the loaf pans for 10 minutes before turning the loaves out on a cooling rack.
