We love our soups loaded and full, so It is a hearty and sustaining soup with flavorful rotisserie chicken, potatoes, corn, carrots and a rich broth.

Instant Pot Cooking Options:

SOUP FUNCTION: We used the soup function to make this soup. We let the pot natural release for 10 minutes. Then we quick released the pot. It’s a very easy way to make soup and the soup function always makes a good soup for me.

SLOW COOK FUNCTION: Come home to a finished chicken dinner with the slow cooker function. Set the instant pot to slow cook. Use the normal setting and either 6 or 8 hours.

Since you are really only cooking the vegetables you can slow cook this soup all day on low heat. The instant pot will automatically keep you dinner warm until you need it.

MANUAL FUNCTION: To hurry this chicken soup set the instant pot to manual high heat for about 10 minutes. Quick release and serve.

You are only cooking the vegetables so this will work with precooked rotisserie chicken. Just make sure the potatoes are tender before serving.

How can I add more flavor to my Chicken Soup?

If you’re using a rotisserie chicken a lot of the seasoning work is already done, but if you are using your choice of raw chicken seasoning can be a challenge as chicken has a mild flavor profile. Some tips to bring out the flavor would be by using a good quality salt and seasoning it well.

Another tip that isn’t as well known is to use a dash of fish sauce or Worcestershire sauce. Both will add a richness that can be lacking in chicken soups. A squeeze of fresh lemon juice can also add a bright finish to your soup.

Chicken vegetable Soup made with rotisserie chicken meat is so simple and tasty. The rotisserie chicken adds amazing flavor and makes this chicken soup so easy. Your Instant pot can cook it on the soup or slow cooker function.

Ingredients

  • 3 cups Rotisserie Chicken-chopped (add more to taste)
  • 3 large potatoes (I used yukon golds)cut into one inch pieces
  • 1 large onion (I used a white onion)3 stalks celery
  • 3 carrots-cut into small slices
  • 1/2 Cup green beans-fresh-cut into one inch pieces
  • 1 Tablespoon fresh ginger-peeled and minced
  • 1 clove fresh garlic-minced or pressed
  • 1 Cup frozen corn
  • 8 Cups chicken broth
  • 2 8 oz. can tomato sauce
  • 1 15 oz. can diced tomatoes
  • 1 tsp. salt
  • 1 tsp. pepper
  • 2 Tablespoons Italian Seasonings
  • parsley for garnish

Instructions

  1. Prepare the vegetables as directed in the ingredient list. Make sure they are bite sized pieces.
  2. Pour all the vegetables into your instant pot stainless insert. (take out the rack-it's not needed for soup)
  3. Cut the rotisserie chicken into small pieces.
  4. Pour the chicken over the vegetables in the instant pot.
  5. Add the diced tomatoes, tomato sauce and chicken broth.
  6. Add the Italian seasonings (if you have bay leaves and want to use them add them now).
  7. Lock the lid and set the instant pot on soup function. Natural release for 10 minutes and then quick release.
  8. Serve.
