Delicious warm, and melty Southwest toasted cheese sandwich is a flavorful combination of your favorite artisan bread filled with healthy avocados, a delicious homemade Southwest sauce, peppers and bacon melted together with your favorite smoked cheese. Our family loves a good toasted cheese sandwich. I bought a Griddler from Cuisinart last year. My kitchen life changed in a really good way. The griddler is easy to use for MANY functions. The Toasted Cheese sandwich is now a favorite in it endless varieties. Along with The Reuben. Can’t forget that incredibly delicious bad boy Manwich.

Bacon, avocados, peppers, smoked cheese… and my own sauce using mayo, Adobo and Salsa. I’ll show you how to make down below. Simple and what a Southwestern flavor boost!

Southwest Toasted Cheese Sandwich:

This is what it looks like on the inside. Yes, that is one whole avocado, mashed and spread over a layer of salsa. Feel free to adjust the amounts of these ingredients to best suit you. We were hungry and dinner was late last night so I might have let my eyes get a bit bigger than my stomach! For a smaller appetites; cut it half  for two servings. It’s a very filling, messy sandwich. And oh so good!!

Homemade Southwestern Sauce:

  • 1/4 Cup Salsa(any pace type salsa will work.)
  • 1/4 Cup Mayonnaise
  • 1 Tsp. Adobo sauce

Whisk together and set aside. Use as a sandwich spread for this recipe or any Mexican flavored sandwich or dressing.

Chill in fridge covered up to a week.

Yield: 1 grilled Sandwich

Southwest Toasted Cheese Sandwich

Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes

Ingredients

  • 1/4 mashed avocado
  • 1 slice cheese
  • 1 slice tomato
  • 1/2 leaf lettuce
  • 1 Tablespoon butter
  • 1 slice cooked bacon
  • 2 slices Jalapeño Cheese bread
  • 1/2 Teaspoon Adobo
  • 2 Tablespoons Salsa
  • 2 Tablespoons Mayonnaise

Instructions

Cook bacon to your desired doneness. Set aside.

Whisk together salsa, mayonnaise and adobo. Set aside

Mash avocado. Set aside.

Heat panini grill or sandwich maker to proper heat. OR set a skillet on medium high heat.

Assemble Sandwich:

Butter one side of each slice of bread

Flip the bread over.

spread both slices with the salsa sauce

spread avocado over one bread slice

add cheese

add the bacon

lay tomato slice over the cheese

lettuce on top

Put the top slice of bread over the lettuce.

Grill until the sandwich bread is golden brown and the cheese is melted.

Notes

To make this sandwich on a hot skillet.

Use medium high heat.

Lay the sandwich on the skillet.

Turn the sandwich with a spatula once the bread is golden brown on the bottom.

Flip the sandwich over and continue to cook until done.
