Start by mixing together
2 1/2 Cups all purpose flour
1/4 tsp. salt
To the flour mixture add
1/2 Cup melted coconut oil
Stir with a fork until the flour forms into tiny, pea sized balls
Next, slowly pour in
6 tablespoons water (adjust to your need)
Stir until moistened and forms a ball of dough when squeezed gently
Divide in half to make 2 dough balls
One for the bottom pie crusts, one for the top
Form each half into a ball
Roll out one ball for the bottom crust
Lay the rolled pie dough into a regular depth 9 inch pie pan
Adjust the dough so it evenly covers the plate with over hang of about a 1/2" all around
*The excess can be trimmed and crimped as you desire*
This recipe will make enough for a bottom and top crust of (1) 9" pie
Fill with pie filling and roll and fit the top crust as you prefer
You can also divide it between (2) 9" pies that need only a bottom crust, like a pumpkin pie
