Lemon is the theme this time of year! I see lemon everywhere. Our lemon recipes like mom’s Zucchini Lemon Loaf,  Toasted coconut Lemon Bars And Lemon Almond Bread are very popular right now. Summer parties require a bit of zing with lemon treats. Do you love lime? Coconut Lime Shortbread cookies are another great party tray addition. So many choices!

I’ve really been craving a slice of lemon bread from Starbucks. I mean who can beat Starbucks, Right? Anyway, I made this iced lemon loaf as a consolation prize for myself. Surprise! This is a fantastic Lemon loaf. Who needs Starbucks?

I have a long, fond history with Starbucks. When I went to college in New York I lived the dorm life. Cafeteria food was my life. So I didn’t eat much.

On the final week of the quarter realized I had a preloaded college card for food. At places other than our cafeteria! I had deprived myself the whole quarter of coffee and cake.  One of my fellow students clued me in. My food card was good at Starbucks! I was so incredibly happy.

But I had to use over $100 in a week at the end of the quarter or I would lose it. I devoted myself to the task. No nasty dorm food that week.  I probably ate about 3 full loaves of Starbucks famous iced lemon bread in one week and drank a lot of really great coffee!

I’ve developed a fondness to that light and beautiful iced lemon bread over the years since. It gets expensive though without my handy Starbucks card! I make it myself now that I have a kitchen life.

This recipe is really simple and quick to pull together. Not only does it add a wonderful strong lemon flavor, you can see beautiful yellow flecks in each slice of bread! I also added some sour cream into the batter to make it extra moist. Oh my goodness, this bread is seriously moist and light. And smells like heaven!

Iced Lemon Loaf

Iced Lemon Loaf Recipe:

I’ve added coconut oil into my iced lemon loaf to add moistness and flavor. Coconut is a really good flavor friend to this bread. Enjoy!

  • Preheat oven to 350 F
  • In a medium mixing bowl combine flour, salt, baking powder, and baking soda.
  • In a separate bowl mix together eggs, sugar, vanilla, lemon zest, lemon juice, sour cream, and butter with an electric beater.
  • Combine the wet and dry ingredients together.
  • Finally add in the coconut oil and mix well.
  • Pour the batter into a 9 x 5 well greased bread pan.
  • Bake for 45 minutes or until a toothpick can be inserted and comes out cleanly.
  • Cool until room temperature.

    Icing:

  • Combine powdered sugar, lemon juice, and milk and whisk together.
  • Cool loaf is completely before pouring the icing over the top of it.

Ingredients

  • 3 eggs
  • 1 cup sugar
  • 2 tablespoons butter, room temperature
  • 1 tsp vanilla extract
  • 3 tablespoons lemon zest
  • 1/3 cup lemon juice
  • 1/2 cup sour cream, you can also use plain greek yogurt for a healthier bread
  • 1 1/2 cup flour
  • 1/2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup coconut oil
  • Icing:
  • 1 cup powdered sugar
  • 2 tablespoons milk
  • 1 tsp fresh squeezed lemon juice

Instructions

  1. Preheat oven to 350 F

  3. Next, mix together eggs, sugar, vanilla, lemon zest, lemon juice, sour cream, and butter with an electric beater.
  4. Combine the wet and dry ingredients together and beat with the mixer.
  5. Finally add in the coconut oil and mix well.
  6. Pour the batter into a 9 x 5 well greased bread pan.
  7. Bake for 45 minutes or until a toothpick can be inserted and comes out cleanly.
  8. Cool on cooling rack for a few hours.
  9. Icing:
  10. Combine powdered sugar, lemon juice, and milk and whisk together.
  11. make sure the loaf is completely cool before pouring the icing over the top of it.

Notes

Substitute all the butter for coconut oil for more coconut flavor. Greek yogurt can be used instead of sour cream if desired.
