Grilling vegetables on a kabob is easy.Keep the grill at medium heat. Turn the kabob occasionally until the zucchini gets the blackened edges that signify a smoky flavor is imbued into the pieces. The tomatoes will shrink and get some black spots as well.
That’s it! Off load your kabob onto a plate and serve it with a grilled meat for a filling healthy dinner. The picture below shows onions, peppers and sausage with the tomatoes and zucchini. Grilled deliciously. We used a little gourmet sauce on them. This is so fun for a hot day.

Grilled Sausage Tomato Zucchini Kabobs. Tomatoes and zucchini are good companions on the kabob skewer. Turn off your oven and turn on the grill! Hot summer days like these are best spent outside. Grilling vegetables on a kabob is easy.
Ingredients
- 1 large tomato
- 1 zucchini
- 1 oz chicken sausage cut into one inch sections
- 1/2 onion cut into 1 inch sections
- 1/2 pepper seeded and cut into quarters
- Gourmet sauce as desired
Instructions
- Assemble the ingredients on the skewer by alternating the vegetable and sausage until the skewer is almost full but not to the very end
- Leave some room to set them on a grill brace. Grill on med heat until the skins are blackened but not burnt
- The sausage chunks should be dripping and sizzling
- Remove to a plate and serve.
- Gourmet sauce of your choice may be brushed on at any time during the process or set some in a dipping bowl at serving
